Healthy Meals Planning for this week(19)
Anita posted on Facebook about a new magazine called CLEAN EATING. This magazine is AWESOME!!
I have decided to try their FREE downloadable 7-day meal plan. I have made a few adjustments based on what I have available like using regular natural peanut butter instead of almond butter, etc. I also went through and made a grocery list of the items I don’t currently have so would be ready for the week.
Healthy Meals Planning for this week(18)
This week is a special week in our household. It is our dear son’s birthday and we have family in town. It is going to be a great week!
Because of this, my meal plan this week is a bit different. Here are this week’s healthy meal ideas:
MONDAY- Mexican Night! Taco bar with chicken, hard and soft tacos, lettuce, cheese, onion, tomato, rice, black beans, sour cream
TUESDAY- Grilled steak, baked potatoes, green salad
WEDNESDAY- grilled salmon (Gorton’s that I got on sale at Publix), long grain and wild rice, steamed broccoli
THURSDAY- birthday dinner out!
FRIDAY- hamburgers on the grill, corn on the cob, fruit salad
BREAKFASTS: scrambled eggs and whole grain bagels, whole grain waffles or Cascadian Farms Organic cereal
LUNCHES: leftovers, turkey sandwiches with pretzels and fruit or strawberries and yogurt (for me!!)
Sorry for the boring menu this week. It’s a little crazy around here and there isn’t much time for cooking!

Here are this week’s healthy meal ideas!!
MONDAY- Salmon Niçoise Salad (saw it on Rachael Ray this morning and I have all that Salmon from the sale at Publix!! Recipe Link Below)
TUESDAY- Organic Chicken on the grill with rice (have a TON from the Publix and Harris Teeter sales!) and veggie stir fry (frozen veggies from the Publix sale)
WEDNESDAY- KABOB NIGHT -fruit kabobs (chunks of fruit on a stick. my kids love them), steak and chicken kabobs with onion and green peppers on the grill, corn on the cob PERFECT WARM WEATHER DINNER!
THURSDAY- Vegetable Pasta (whole grain pasta and sauteed olive oil, garlic, onion, and any extra veggies I have that need to be used!! Add the sauteed veggies to the pasta and some parm cheese. YUMMY!)
FRIDAY- EATING OUT!!

This week’s healthy meal ideas:
MONDAY- Grilled steak salad (using steak I found on sale a few weeks ago and the salad kit on got on sale this week at Kroger)and whole grain crusty bread (baton from Publix for $1.89)
TUESDAY- Salmon, long grain and wild rice, and steamed broccoli
WEDNESDAY- hamburgers on the grill (Laura’s Lean Beef on sale at Kroger this week) with sauteed onions and mushrooms, green salad, corn on the cob
THURSDAY- marinated chicken breasts on the grill, fruit and greek yogurt, roasted squash (on sale this week at Kroger), green salad
FRIDAY- baked potato bar (organic potatoes were on sale last week at Kroger)
BREAKFAST: Kashi organic cereal, organic milk or organic eggs, sliced fruit, and whole grain toast
LUNCH: flatbread sandwiches (use extra chicken and steak from dinners), Stacy’s Pita chips and fruit
SNACKS: organic apple slices and natural peanut butter or greek yoghurt

Here are this week’s healthy meal ideas:
MONDAY- Baked Tilapia and Fresh Spinach (recipe below), long grain and wild rice, fresh fruit and yogurt
TUESDAY- Grilled steaks, roasted sweet potato slices with cinnamon, green salad
WEDNESDAY- Pasta Chicken and Artichokes (recipe below)
THURSDAY- Healthy Sloppy Joe (recipe below)
FRIDAY- Family Celebration Night!! (My first born is registering for Kindergarten on this day and we are celebrating. I am crying already!!)
BREAKFASTS: Organic hard boiled eggs, wheat toast with natural peanut butter and sliced fruit or Cascadian Farm cereal and organic milk
LUNCHES: flat out bread chicken wraps (I am cooking chicken breasts on Monday to shred for lunches this week), organic baby carrots, sliced fruit (my daughter wants a few goldfish as well, so ok!)
SNACKS: Homemade fruit pops!! (Blend fresh berries, peaches, bananas, etc with yogurt and pour into ice cube trays, cover with plastic wrap, stick toothpicks in them and freeze or use popsicle trays that are made for small children. I got mine on diapers.com)

This week’s healthy meal ideas are a bit different. I received my recipe book along with all my coupons from Lundberg and have decided to try each of them this week. The link is below for all of these recipes:
MONDAY- Marinated Vegetable Salad
TUESDAY- Stir fry Beef Salad
WEDNESDAY- Grilled Chicken Salad
THURSDAY/FRIDAY- I will not be cooking these days, but try one of the other Lundberg recipes and let me know how it was on Facebook or at the bottom of this page!!
BREAKFASTS- the hubby and I bought The Biggest Loser Protein powder to make smoothies (mix with ice and berries) and my kids will be having Cascadian Farms cereal and organic milk
LUNCHES- turkey sandwiches with flat out bread, sliced apples, baby carrots or fruit smoothie
SNACKS- sliced fruit, string cheese

MONDAY- Smoky Veggie Quesadillas (recipe below), homemade hummus (garbanzo beans, cilantro, garlic and tomatoes), fresh berries
TUESDAY- Chicken Kabobs on the grill, Caprese Pasta Salad (recipe below) and crusty whole grain bread
WEDNESDAY- Loaded Steak Salad (recipe below) and crusty whole grain bread
THURSDAY- chicken breasts on the grill and spring couscous with asparagus, peas and mint (recipe below)
FRIDAY- Smoky Pepper Pizza (recipe below)
BREAKFASTS: Organic hard boiled eggs, sliced fruit and whole grain toast with natural peanut butter
LUNCHES: leftovers, veggie and cheese quesadillas with carrots and apple slices
SNACKS: almonds/walnuts, fresh fruit, Sargento string cheese sticks
Healthy Meals Planning for this week(12)
It’s going to be a pretty busy week around here. So, nothing fancy!! Also, organic chicken has been on sale for $5.99/lb, so we will be having chicken several times this week!
MONDAY- chicken quesadillas (shredded chicken, natural shredded cheese, sour cream, grilled onion, whole grain tortillas), black beans and rice
TUESDAY- Chef salad, fruit salad, crusty whole grain bread (swim lesson night for us. no time to cook!)
WEDNESDAY- Chicken breasts on the grill, baked sweet potatoes, green salad, raspberries for dessert
THURSDAY- black bean burgers (Morningstar Farms), Annie’s Mac & Cheese, fruit salad
FRIDAY- Hubby and I are attending a birthday party, so it will be KIDS CHOICE NIGHT (my daughter’s favorite night!! Normally, she chooses spaghetti)
BREAKFASTS: Hard boiled eggs, whole grain toast with all fruit spread, apple slices
LUNCHES: Salad with egg, cheese, nuts and turkey (I make little kits for us to take to work) or turkey and cheese sandwiches
SNACKS: organic fruit snacks, organic yogurt, fruit, nuts, peanut butter and celery

Found some great produce and meat sales this week at Kroger! So, we will be eating some great food this week! Planning on grilling out all week!!
MONDAY- Grilled chicken (on sale last week at Kroger), watermelon, corn on the cob and strawberries and blueberries with angel food cake (berries on sale this week at Kroger!)
TUESDAY- Grilled salmon (found it on manager’s special this week!), baked sweet potatoes, green salad
WEDNESDAY- spaghetti and meatballs (my daughter’s favorite)
THURSDAY- Taco Bar (Shredded chicken, ground beef, shredded cheese, lettuce, tomato, onion, Spanish rice, etc I let everyone make their own!)
FRIDAY- hamburgers on the grill, fruit salad, roasted zucchini (sliced, mixed with olive oil and garlic and put in the oven for 10-15 minutes), corn on the cob
BREAKFASTS: egg white omelets, sliced fruit, whole grain toast or cereal
LUNCHES: PB& J or cheese quesadillas with baby carrots, green peppers, cucumbers and ranch dressing for dipping
SNACKS: mixed nuts, raisins, celery and peanut butter

This week’s meal plan:
MONDAY- Mahi Mahi with mango salsa (2 peaches, 1 mango, 1 green onion, a handful of cilantro, 1 medium tomato, 2 cloves of garlic, juice of one lime, salt, and pepper. blend together in a food processor and bake over fish), long grain and wild rice
TUESDAY- Filet Mignon on the grill, baked potatoes, green salad, fresh strawberries for dessert
WEDNESDAY- Hamburgers on whole grain buns, roasted sweet potatoes and asparagus (in the oven with olive oil and garlic)
THURSDAY- Grilled Chicken Salad with crusty whole grain rolls
FRIDAY- Chicken Kabobs, Fruit Kabobs, corn on the cob and fresh berries for dessert
BREAKFASTS: hard boiled eggs, cheese, whole grain toast, and sliced fruit or Enviro kids cereal with organic milk
LUNCHES: Cheese quesadillas with fruit and baby carrots, PB&J; with apple slices and yogurt
SNACKS: Barbara’s Organic mini cookies or fruit and string cheese
